I've made this soup twice this year and have had great results. I just made up the recipe, though I'm sure there are plenty out there that are very similar. Here's mine.

Non-Tortilla Soup

1 rotisserie chicken torn into bite sized pieces
2 cans chicken broth
2 cans of Rotel
1 can corn, drained
1 can black beans, drained and rinsed
1 bunch cilantro, roughly chopped
1 medium yellow onion, chopped
1 red bell pepper, chopped
2 tablespoons chili powder
2 teaspoons ground cumin
olive oil

1. Saute the onion and pepper in olive oil until tender (about 5-7 minutes).
2. Add remainder of ingredients and bring to a boil. Simmer for 20 minutes or more. 

Serve with cheese, avocado, tortilla chips, etc. Serves 6.
